Citric Acid is widely utilized in the food & beverage industries as a preservative and flavoring agent with E number of E330. This is a weak organic acid with chemical formula C6H8O7 and molecular weight of 192.12 g/mol. It is naturally found in citrus fruits & vegetables including orange, lemon, & grapefruits. Salts of Citric Acid can also be used as anticoagulant agents due to their ability to chelate calcium ions. It is a tricarboxylic acid which also finds its application as an excipient in pharmaceutical formulations.
